smoked capicollo

Hi everyone ! I've been using my contertop smoker ALOT and i love it . I posted picture of my bacon a while ago and i've got better at it and must have made 100 lbs of it ! Now im trying my hands at some capicolle and it turned out GREAT

I cured it 1 week in the fridge with the cpaprika, salt, garlic powder, onion powder , cinnamon , cayenne and the cure. Except the cure everything is approximative.

i did not rince it and put it right in the smoker after that until the temperature is 160 F

I think it was even better than bacon ! tommorow im starting my first batch of jerky !
