I use my version of Vaunted Vinegar Sauce.
Vaunted Vinegar Sauce:
1 cup Nakano Rice Vinegar, Original Flavor (original recipe calls for apple cider vinegar)
1 Tbsp. Brown Sugar
1 tsp. Kosher Salt
1/2 tsp. Black pepper, fresh cracked
1/2 tsp. Red Pepper Flakes
Directions:
Place all ingredients in a small glass bowl
Microwave at high for 90 seconds; stirring the mixture a few times, during the heating.
Let cool, and season pork to taste.
You can add 1 - 2 tablespoons of ketchup to make it an Eastern North Carolina style sauce. Or add some of your favorite hot sauce, and/or Worcestershire sauce.
