Foot, I'm going to recommend one thing that I believe is important to you.. from 7 years making snack sticks I've had alot of disappointments, and now nothing but sucess!!I can't stress enough how important it is to immediately drop the snack sticks into a cold water bath with ice. This stops the cooking process and helps the casings adhere to the meat. Alot of people make these and comment; (why do my casings peel off? ) this in my opinion is why, because they dont ice bath them.. Don't worry tho, the water will not wash off the smokey flavour.
