I made sausages yesterday. Classic Bratwurst, My favorite.

Nice one, I just made pork and leek sausages( best sausages ever) and the next one is pork, sweet chilli with touch of  ginger.

What recipe did you use?  I make them using Len Poli's and like it.  But always looking for a more traditional style.

I used the Classic Bratwurst recipe from the book Charcuterie, a really good mild pork sausage.

3 lb pork
1 lb beef (veal if you can find it)
1 lb back fat
3 tbsp salt  or to taste.
2 tsp white pepper
1 1/2 tsp ginger
1 1/2 tsp nutmeg
2 eggs
1 cup cream

I stuff them in pork casings.
