How to maintain temperature?

Live in Canada and today is -31 with wind chill of -40.
How do you maintain temperature in a 4 rack smoker? I am all over the map each time a breeze hits the smoker. Trying to do a turkey stuffed with a canada goose stuffed with a duck and stuffed with a grouse. (bird in bird thing)

First, welcome aboard.   :)

Some people have gotten fancy and built little sheds for their smoker.  Others have done things such as attach some sort of insulation to the sides, like a water heater blanket.  The main thing is try to keep it out of a direct wind, that sucks the heat right out of it.

I have my six rack in my garage with a 5 inch duct over the top vent piped to the outside with with an inline duct fan to suck the smoke up as it comes out of the smoker. Works great! Doing a prime rib as we speak.

Thanks for your input. Went to the small Bradley so as to no longer need my "smokehouse". Have a propane fired smoker as well that hates being used in cold weather.
So back to the smoke house I go.
