This is Vern Butler from Morning Beckons Meat Products.  I use my Bradley smokers for creating small batches of exotic meat products.  I have certainly found Bradley smokers to be challenging in a production environment but with electric heat and auto feeding biscuits are something I can't live without.  I am a 35 year technology executive who also happens to own a large farm and custom butcher service.  I plan to share my experience with each of the different Bradley smoker models I have used over the years.

Welcome to the forum Vern, looking forward to your posts. I have stuck with the Bradley Original and am now on my second one, the first gave me 12 years service before being passed on to my son a couple of years ago and is still going strong.

Like dubob I liked your Smart Smoker review and comments, I am intrigued to see how the yet to be released Professional Smoker pans out given the potential for even more to go wrong!?

Manxman, I read everything I could find on the new professional model and I am afraid it also is going to fall short of the mark.  I think it will be a really good homeowner model but from what I can find it lacks many features that you need in a professional model.  On the plus side they completely redesigned the biscuit feed system and the firmware can be upgraded, these are both really important steps in the right direction.  The dual heating elements and dual puck burners seem to be appropriate for the size of the box so heat control and fluctuation should be better.  They still have a 10 hour limit on cook time, one cook stage and no shut off on food temp which are definitely not conducive to professional use.  I also didn't see any kind of connectivity which is very limiting if you are doing more than one thing at a time.  Don't know the price but if it is within reason I will most likely buy it and make the improvements needed to use it in my business.  Electric heat and auto biscuit feed keep me coming back to Bradley no matter what the other issues are.
