Safe temps?

I just converted my smoker to the 900 heating element and added the Auber PID. 

I've read on other sites about high/fast cooking and wondered what temps I can safely use in my Bradley ?

 I added an extra element to mine years ago and as far as temp it does not get much hotter. I make sausage and ribs and pork butts so I usually don't go over 250. The extra element is more for temp recovery I think.

Keep in mind that Bradley has a built in high temperature sensor that will shut down your smoker at around 280°F, but it could trip at a lower temperature, so if you have a PID it would probably be best not to set if over 250°F.
