I have 1  7lb Boston Butt  and 8 lbs of baby backs. How long will it take to cook all this with a steady temp of 205-210? I have some freinds  comming over for the football game and would like it to be ready for around 4:00 including the FTC time.  Thanks much.

that is in 12 hours... i think... or mabye 11 hours depending where you are...

start it now... start it now... start it now...

this is what i would do...

2 racks of ribbs i suppose... if so... bottom shelf butt...  next to bottom shelf 1 ribb... next to top shelf 1 ribb...

at 4 hrs... after smoke... i would change the water and rotate...

butt goes to next to top shelf so its goo will drip on ribbs... next to top shelf ribb to bottom... next to bottom shelf stays the same but rotate them all front to back...

you can use ftc time for the grubb time buffer... ribbs will finish 1st... ftc them with some apple juice... they will most likely still be warm in ftc when the butt is done... i hope... you may get some ftc on the butt but it maybe shred and grubb right out of the box...

you gotta eat...
