New to smoking and need a recipe and good idea for New Years Party

I just got a Bradley digital 6 tray for Christmas and want to make something good for my party. Any ideas or help would be greatly appreciated!  have a whole chicken, venison hot sausage, can I do something with these? Any good sauce recipes?

As for ideas, they are endless.  Would depend on how many people you have coming and how much time.  Pork butts are relatively easy, produce a good quantity of product for a crowd and have several serving options such as pulled or sliced and can be served in several styles such as BBQ or Carolina style with a vinegar based sauce and slaw.  Those recipes can be found on the sites.   I have tried the following (or close to it as I have a hard time of following any recipe exactly ;D).

new years eve party... defniately northernlights5... thats all i would be smoking... unless someone shows up with some bc2... then i would be smoking the combo... and if someone showed up with some humboldt7... sh1t man thats a buffet...

Welcome to the forum.

Do take a look at the recipe site. You didn't say when the party was, if it is soon what ever you make for your party, practice first. One thing you do not want are things to go wrong at the last minute, and you have a bunch of hungry guess waiting for food. If this was my first time using the BS I would do a couple of batches of chicken wings. You can do this 2-3 days in advance, then the day of the party you can hit them with some sauce, if you want (if using commercial sauce do not get any sauce that has smoke flavor added), put them under a broiler for a few minutes and you are set to go.

My first smoke, not many weeks ago was 4 whole chickens. Turned out real nice and was not too stressful, as it doesn't take that many hours to do 'em. Plus, you won't hurt chickens a bit if you need to finish them off in the oven 'cause the smoking session ran a little long...  :)

I rubbed mine all over with good italian salad dressing and heaved 'em into the smoker with 3-4 hours of maple. When it got about an hour short of dinner time and they weren'd done yet, I popped 'em into the oven at 325 and finished them there. Next time, I know to allow a little more time!

if i weere going to smoke food for a small to midsize nye party i would do a whole smoker of olds checken rolls... 4 per shelf... 16 total... when those are done i would do a full smoker of west coat kansasans baken scallpops...

roll the checkens early... wrap the scallpops early... get that out of the way and clean up...

5 hrs bf party grubb time slam the bs hot as it will go... slide in all checken rolls... 3hrs of smoke... when the smoke is over they come out and sit on oven rack... then load up the scallpops and follow wck directions...

turn on the oven broiler are crisp the checken rolls and pull the checken rolls 30min before you pull the scallops...

i wish you good cheeze karma... pay ahead...

it will be awesome...  guaranteed...

Funny owrstrich I was going to suggest the chicken rolls myself as they are so easy to do...and don't require a long time to cook.
