I smoke some nice ribs and many of my friends have enjoyed them.  The question I have is when you have three racks of ribs rather than two.  When I have two full racks, I cook them up great.  If I have more than that, using three or four adjustable racks, it takes forever to get up to the right heat, and the lower sets of ribs over cook and get dryer.

I am caught between opening the door to switch around the adjustable racks versus keeping the door closed and maintaining 200-210 temp.

I saw a beautiful photo shoot by Owstrich and my ribs look just like that, but I want to be able to smoke up three or even four full adjustable racks of ribs.

What do the wise ones say?  How about the rest of you? ;)

I recommend that you rotate them periodically.  While you are in there, spray with apple juice.  It will not hurt to cook a little longer.  You can get the temp back up faster if you work fast and put the heat on maximum for a few minutes and then re-adjust before reaching the target box temp. ;)
Life is short. Smile while you still have teeth.
