Adding extra Rails for racks

 Has anyone ever riveted a few extra rails in so you could get a few extra racks of jerky in? I figured with inverting 4 trays you have 8 racks and if you add 4 more sets of rails in between them you would have a total of 12 racks for jerky or small stuff that lays flat. Anybody ever tried this?

Hi carnie1,

Most I have ever seen referred to on the forum to date is the 4+4 idea using inverted racks, used this myself quite a few times successfully.


Think 12 racks would be a pretty tight squeeze, could it affect smoke/heat circulation unduly??  ???

I sometimes add a 9th rack when doing jerky if I need the space. I just slide in a couple of 2.5 inch high x 5/8 inch x the depth of the tower wood spacers on top of the top 2 racks. The spacers are right on the top of where the 2 racks are resting on the bracket.

Seems like Mr. Walleye has a good idea for the few time more than 8 might be required.

I think more than 8 would be adding a lot of moisture to be moved through even a full open vent ???

Maybe just dont rotate the bottom two racks (they will dry first and I dont think the others will retain that much extra smoke after they have started to dry ???) and put the extra pieces in on those racks when they are done? Never faced this - I enjoy jerky but am the only one in the house eating it. 5 lbs of eye of the round 1/4 inch thick is a nice fit on the 8 rack technique I have used.

Just an idea but we are not what would be referred to as jerky monsters volume wise.

Only when their talking together.  LOL
I don't know if it would be safe for them to show up together.
20 LBS of jerky would disappear instantly and a big fight for the last scrap.
