refer brisket IN liquid or dry?
« on: June 08, 2007, 07:03:54 am »
Hey all,
Thanks so much for all of the info shared here.

I just got done cooking/smoking my brisket this morning.
I boated it this time and had added some apple juice.
Looks much more moist, alright I did sneek a few bites to check it,
it was much better than my first attempt.

We are not going to eat it until tonight.

Should I store the brisket in the liquid which is about 1/2 way up the brisket or "dry" in a ziplock type bag?

Don't know if it would make it soggy or ruin it.
Thanks,
AHAB

I'm not really in the know on this, but I'd store it dry.

I'd store it dry, but save the liquid for a low and slow reheat
Grab me another stout, or scotch, or martini, or........

Sorry to be so late but I have kept it the liquid.  No problem with it getting soggy or mushy.
As acords stated, the liquid is great for the reheat as well.
