How long for ribs to keep in the fridge?

Smoking my first baby backs in the BS today. As usual I picked up the ribs at the grocery store a few days too early and wound up using them 1 day past the sell by. Now, these ribs had the typical slight "sour" smell since they were in the fridge too long. However, after washing them I couldn't detect any off smell. I went ahead and *tried* to remove the membrane (first time) and couldn't get it all off. So, I basted in my typical dijon mustard and cider vinegar then rubbed with a bunch of spices and garlic and they are in the BS smoking away.

In your experience, are these ribs OK to eat and if so will the taste also be OK? I know people age beef and such, but not pork as it appears to spoil rather fast. Thanks!

They're safe to eat, just won't be enjoyable....at least that's my experience with that problem.
