Favorite Equipment (Meat Processing)

For anyone just starting out and looking for good equipment to process your meat before smoking, here are a few items I use to make Jerky and sausages. The one thing I did not provide is a link for the meat-grinder attachment I use on a KitchenAid stand-mixer. I own an electric meat-grinder that doesn't work as nicely as the KitchenAid attachment... not to mention the mixer itself is far more useful for other things anyway!

** Caveat: the sausagemaker site is excellent for bulk spices and a few other things. They even carry the PAK thermostatic control, but again, a little pricey, but with great shipping response and service.

I am not thrilled with the meat slicer that I am using. The one that I have seen that I like is at Cabelas and cost is $300. The carriage and the "thickness" adjustment plate on the Cabelas is very sturdy. Looks pretty good, but a little spendie.
How do you like the Chefs Choice? Do I understand it correctly, the body is made of aluminum/steel? Picture looks like plastic.[?][:D][?]

Yes- the body is made of metal; everything but the sliding tray. It is actually quite heavy.

The only complaint I have is that I wish it had a longer 'throw' on it so I could slice longer pieces of meat. I think it goes up to about 7 or 8 inches. Maybe it has something to do with the blade size.

What I REALLY want is one of those Hobart slicers we see in the deli! Something I could slice an entire beef flat on without cutting down to size!

I've owned mine for 6 or 7 years and it hasn't caused me any problems yet. (and I paid a LOT more than the price listed... that just kills me)

Sure makes slicing jery easy!!

A Hobart would be nice. The last used one I saw for sale around here was $600.

I bought that exact sausage stuffer last year from Sausage Maker for approx $200 greenbacks[xx(][V]- by the time it got to my door it ran about $300 Canadian pesos. That northern tool deal is a good one! It is a nice stuffer though. This last comment makes me feel better despite my obvious lack of internet shopping skills....[8][8]
