New to forum, Old idea

One of the reasons that I have bought my smoker is to try out an idea that I have had brewing for the last few years now. I am going to expeiment this summer with salmon sausages. Either pre cooked salmon or raw salmon stuffed in tubes with spices and a proper binder. I would like to know if anyone has tried this out yet and perhaps can throw me a few good pointers.
