I found the nonstick coating did'nt holdup very well on the jerky racks. I prefer the Jerky Screens on the regular racks. Here's a link to them on Yard & Pools site.

I have both and I agree with Mr Walleye. The non-stick does not hold up very well. They are, however good for almonds and such. You still need to use cheesecloth, but they seem to support the product better.

The jerky screens - well - I used them once, seemed like they acted more like an insulator than the metal racks. Then I put a stack of (clean) racks and screens in the oven (off) to store until I had time to put them away..... 16 year old son came home from school, fired up the oven (450) to make a frozen pizza. The heat merged four racks to one very easily - and it was a b!7ch to get my new extra-thick jerky screen separated from the jerky rack... LOL

Someone was researching hi temp screens.

I have the Bradley jerky screens, but I have eight of these silicone mats that work well. I use them to make my stuffed meat loaf logs (many will call them fatties). They are expensive; $12.00 each or 4 for $38.00. You need two to cover a tray, with some overlap in the middle, and about 1/2" not covered length wise.

They are called Hole-e Smokes Silicone Mats, and are safe up to 650°F.

So Habs...Silpats?

Before hearing about Hole-e Smokes Silicone Mats, I did look into Silpats. I had planned to punch holes in then to let the smoke through and drippings to escapes. Fortunately I spoke to a person at a kitchen supply store. He informed me that you could not cut Silpats, because it was fiberglass coated with silicone, and that doing so would cause fiber glass to contaminate your food.

I'm glad I got the Hole-e Smokes, besides my stuff meat loaf logs, they work great on the grill when grilling fish.
