Good morning, Can anyone give me advice on the best way to smoke Olive Oil and what bisquettes would be best?

Hi Chris;
Welcome to the forum.

The subject of how to smoke a liquid (such as vinegar) and oils has come up for discussion a few times. Nothing was every resolved. IMO other then using liquid smoke, you would need to infuse the oil. My thought would be to purchase either large stainless steel balls, or stainless steel bars or use some other stainless steel objects, and throw those into the smoker while you are smoking something else. The smoke will coat the stainless steel. Next place those objects into the oil to allow the smoke flavor to infuse into the oil (this may take a few hours or days). Oak wood would seem to be the best flavor for this.

Before you make a flavored oil, check with your local cooperative extension, or do some research on line to learn about the potential dangers of making flavored oils. If you find a way let us know.
