I'm guessing I can do this Ok, but should I worry about the bones tearing through the bag?

Maybe double-bag them? (slide the 1/2 slabs into a section 8" bag, and put than in turn into the 11")

Squirt I have vacuum sealed ribs without any problem. However those were uncooked ones and not smoked.

I never have leftovers smoked ribbs. They seem to desappear quicker than it takes to vac seal them. :D

Thanks HR.  I need to get these sealed & frozen before they meet a similar fate..

Pat,
Wrap them in a layer of freezer paper, then put inside the 8 inch bag they should be fine, and the paper should help against punctures.

Thanks Chris.  I'll see if I have any of that.  Otherwise, I'll just double bag 'em.

Man, my fridge/kitchen still smell like ribs.   Mmmmm...
