Sablefish (black cod)

Hi everyone-

One of my colleagues just came back from Alaska raving about the cold smoked Black cod he had there.  To him, it was better than any lox he had ever had.  Anyone out there ever cold smoke Black Cod?  If so, any tips or recipes for how to do it right?  Would Spyguy's lox recipe work well for black cod as well?  Would people recommend any modifications?

Hello kshuler and welcome to the forum.  I have not tried cold smoking black cod myself but will agree that it is some yummy stuff.  I am not a lox fan so won't compare.  Black cod is naturally moist and mild and just darn good fish.  If you can find a recipe for Chilean Sea Bass I think they would smoke very similar.  Someone will probably be along soon with a better answer than mine.  Let us know what you find and how it turns out.

Well, for now I have a small store purchased chunk of Sablefish, only 8 ounces.  It is sitting in the freezer.  My plan for now is next time I do a batch of salmon, to treat it the same and see how it turns out.  Before scaling up I want to make sure that it turns out well on a small (read: inexpensive if I make a mistake) scale.  Thanks for the reply.  I will start looking for Sea Bass recipes as you suggest.
