you have to use cure #2. and dry cure. the sausage has to dry from the inside out. which is the opposite of regular smoking with cure #1. if you don't have the right humidity and temp. the sausage can case harden, which is then junk. case hardening is when the outside will dry before the inside.  and you can't have that happen when DRY CURING.
