Pork neck/ back bones

I don't know who here besides myself has ever BBQ Pork neck/ back bones.  If you have not then you are missing some of the best pork you will ever eat.  They just blows ribs away and cost pennies compaired to baby back ribs.

Try to find a butcher that gets the whole hog.  Have him cut the bones out leaving about 5/8 of an inch of meat on them. Next have him cut across the back bone 3/4 of an inch.  Some will also split the bone in two before the cross cut. You will have to clean out the cord and some vessels, but believe me the eating is worth that little extra work.

Whatever you favorite way of doing pork ribs is how I would suggest you cook the bones~~!

No the riblets are not from the neck/ backbone as I remember... the riblets I saw were the part next to the bone (from the very upper rib--next to the back bone) but were cut too close for eating as in BBG. These are generally an import.
