Hi Jax;

Welcome to the forum.

I've never smoked/cooked a bird bigger then 12.5 pound; but their have been post of members fitting a bird as large a 18 pounds. So I would say choose the size that best fits into your plans.

Some times with cold smoking; depending on what cold smoke setup you use, the circulation of smoke can be poor. As for vent position, start with it half open, and if the smoke is not venting properly widen the opening. Also I find if you remove the "V" pan the smoke will circulate better. Because you have a turkey in the smoker that may drip some liquid, cover the heating element with aluminum foil to protect it from moisture. You may have to use some tape to secure the foil to the cabinet.

And Yes! Definitely keep us posted.
