Welcome to the forum.  For me, I use either apple or maple on birds.

What flavor of smoke are you guys using?
I am thinking Cherry.

I've used Cherry, Apple and Hickory (not together) on Turkeys and it comes out great. No more than 4 hours worth.

Hi Redeyechevy;
Welcome to the forum.

For turkey, I partial to maple, pecan or apple in that order. I generally apply 2.40 - 3:00 hours of smoke.

Apple sounds popular.
I should be back with some results on the weekend.

Thanks
