Monk Fish Recipe

I live in Florida (Lake Okeechobee) and I got some Monl fish (not from the lake but from the grocery store). Does anybody have any good true tried recipes that they would like to share?

I have never tried smoking monkfish but my favourite recipe is monkfish wrapped with parma ham, which I have done on numerous occasions for friends and family. A couple of examples are given below although I tend to vary the recipes slightly to suit personal taste:

Assume the monkfish we get on this side of the pond is the same as on your side of the pond!?  ;) :D

Generally I keep to a pretty simple recipe...... once the tails are skinned and the membrane removed I usually take out the backbone and stuff the fillets with a selection of herbs (e.g. parsley and oregano), sea salt and black pepper in a little olive oil or use pesto as the case may be, then wrap quite tightly with parma ham and make into parcels using tin foil. These are then baked in the oven.

The parma ham complements the monfish really well.  :)

The last time I did Monk fish was just a simple 20-30 minute smoke then seared on the grill!  That was some good eats!

I have tried Monk Fish many ways, but have never smoked it. When camping, just plaster some garlic butter, a sprinkle of chives and whatever seasonings you have on hand, wrap in foil and chuck it into the fire.
It used to be so cheap! I think the answer is a light smoke and an oven finish, taking care not to dry it out too much. Lots of options! The Monk Fish at Costco has got a little expensive, so I don't buy anymore.
My budget is in the Talapia and Cod range now.

Thanks for the suggestions. I decided not to smoke it and instead, marinated it in Alessi white wine vinegar, seasoned with salt, pepper, and garlic. Unfortunately, I did not use my Bradley or Big Green Egg (wife sick and I had to do the hubandly duty and stay inside with her to keep her company. Me, when I'm sick, just leave me alone). Anyway, I cooked it in the oven at 350 with butter and Dill until the Monk fish was flakey. It was just like eating lobster. I wanted to thank you guys for all your help. This is a GREAT FORUM!!
