My First Smoke :-)

Hi Everyone....

I'm simply giddy.  Finished my first smoke today.  I decided late last night to run out to local grocer and pick up a couple of chickens.  I could not wait any longer.  This was too much fun....

Bird bath...Apple Juice Brine made with honey, kosher salt, brown and regular sugar.


The new smoker...barrel loaded with Alder


Bye Bye Birdies


2 hrs of smoke at 230 degrees...another hour at 280...


Another 30+ mins in oven at 325 to crisp and bring to temp (170) et Voila!!


After the brine I decided to go "au natural" as far as a rub goes.  Wanted to try without first then have something to look forward to.  It was awesome.  Cut up pieces of one for dinner.  Plan on chopping the other for sandwiches tomorrow.

Great looking chickens! I haven't tried a whole chicken yet, only chicken pieces.

That smoker looks awful shiny. I almost needed sunglasses staring at the picture. Don't worry, it'll darken up in no time at all ;D
