That is a good sized flat.  I suspect is has a nice 1/4 inch of fat on it to help season and moisten the insides as it melts its way through.   :)
I don't think size matters.   ;D  ;D IT of 180 to 185 should do it.

With giz - 7 lber is a good sized flat.  The 200 deg is a good plan and expect about a 9 to 10.5 hour smoke.  It wouldn't hurt if you waited until an IT of 190 and FTC'd it for a couple of hours.  Brisket is not the easiest smoke, but it is so rewarding.  Good eats and good luck.

Thanks for the advise. Yea from what I read here brisket may not be the ideal thing to try for a 1st smoke but oh well. I got the smoker yesterday and got it seasoned and ready to go, plan to put some salmon on it tonight as it should cook pretty fast compared to brisket.
