Can you safely wrap food in foil without damaging the unit? I read the warnings about sealing trays, v-vent, drip pan, etc. it doesn't say why either.

yes you can use foil, just don't block the holes in the drip tray. You need the grease and drippings to go into the water bowl so you won't have a fire

You can safely wrap food in foil in the Bradley.  Their warning is to not wrap racks nor the V-tray in foil.  Wrapping racks and the tray in foil traps heat and smoke underneath.  Smoke, heat and moisture can't escape.  Not good.
