After weeks of waiting, the last ingrediant has arrived from the US for me to try this legendary rub, my question to you all is which meat best suits this rub? I have inlaws arriving tomorrow so I was planning on having a big bbq,
Seeing as how my wife is the Jan that Jan's Rub is named for I think I may be qualified to answer your question. ;) We put that Rub together after a good friend of ours who owns a local BBQ joint asked us to try his poultry rub. We loved it but he wouldn't give us his recipe. So we cloned it.
The original purpose of Jan's Rub is for for all things poultry. Having said that, it's good on pretty much anything including a rock. ;D
Rub down some chickens and smoke 'em!
I forgot something very very important. Jan and I can't believe you would order the ingredients all the way from the US to New Zealand just to try our Rub.

I have to say that I have just mixed up my first batch of Jan's rub and it was totally worth all the effort of getting the ingredients sent to me from the US, it smells amazing and I can't wait to taste it tomorrow, so a big thank you to both Jan and KyNola for sharing their recipe,
My next mission is Muebe nuggets, I already have the prague instacure #1 from an earlier order, I just need to find the Soy Vay Teriyaki sauce and get it sent here, we have nothing like that over here on the market.
My nuggets have gone worldwide :o
Im still trying to find the things Jan rub don't work on. LOL I am even using it in a new trail stick recipe as my main spice or spices. LOL
I use Jan's rub on Chicken, Turkey, All kinds of pig, fresh and cured... try it on a ham steak, and I also use it on beef. I loke others have not found anything it isn't good on.
One more thing, when coating meat for the deep fryer using flower and egg wash, Jan's Rub is used to at spice to the coating mix as well.
Another hint for those who like to play, I pyt 1/4 cup in my magic bullet/spice grinder and chop it to a very fine dust...this sticks much better and adds way more flavor.

We use it for every thing. I even put it on jerky,turkey legs,pork an chicken rolls, ribs and sprinkle in fried potatoes too! Absolutly love it. Had to make a triple batch to day.
Try it on popcorn and in scrambled eggs in lieu of salt. ;)

After reading so many post about Jan's rub I made up a batch,gave it a little taste. I must say, I can see why everyone raves about it.
Now all I have to do is wait for my new smoker to show up so I can try it on a pork butt.

My friend has a commercial BBQ restaurant and gave me some of his rub. He would not however give me his recipe so I put my wife on a mission to find something very similar on the internet and then we would tweak it to match his. Here is the best effort. It only has 14 ingredients and makes a bunch. Thought you might like to take a look.
Ingredients: •
1 cup + 4 tbsp Brown or white sugar
•1/4 cup Lawry's seasoned salt
•1/4 cup garlic salt
•1/4 cup + 1 1/2 tsp celery salt
•1/4 cup onion salt
•1/2 cup paprika
•3 Tbsp chili powder
•2 Tbsp black pepper
•1 Tbsp lemon pepper
•2 tsp celery seed
•2 tsp dry ground sage
•1 tsp dry mustard
•1/2 tsp dry ground thyme
•1/2 tsp cayenne
Directions: 1.Place all ingredients in a large bowl and mix until well blended. Store in a cool area away from light in air tight jar or sealable plastic bag.

I made a batch of Jan's rub a few weeks ago and took the time to measure than weight each of the main ingredients in metric .. now, this isn't exactly the same but it certainly is based on the same -- the difference being a few ingredients that I got at a local spice store that maybe different (season salt for example) .. but it DID turn out extremely well (both pork and yardbird)
300g white sugar
50g Table Mountain All Purpose Seasoning (Savory Spice Company)
50g Garlic Salt
45g Cambridgeshire Celery Seasoning (Savory Spice Company)
25g White Onion (Granulated)
50g Paprika
25g Red Chili Powder
15g Black Pepper (Freshly Ground Telicherry)
5g Pyramid Peak Lemon Pepper (Savory Spice Company)
4g Celery Seed
2g Dry Sage (1 Tbsp)
1 tsp Dry Mustard (Coleman's)
1 tsp Thyme
1/2 tsp cayenne
Here is regular Jans Rub in Grams. All measurements level spoons to grams. Hope it helps.
Jans Rub
Ingredients: •
1 cup + 4 tbsp Brown or white sugar Brown= 205.2 g. or white= 318.0 g.
•1/4 cup Lawry's seasoned salt = 61.2 g.
•1/4 cup garlic salt = 33.36 g.
•1/4 cup + 1 1/2 tsp celery salt = 70.2 g.
•1/4 cup onion salt = 33.36 g.
•1/2 cup paprika = 54.24 g.
•3 Tbsp chili powder = 24.6 g.

Ahh -- 2 tsp celery seed is 16g or so? Doesn't seem likely unless you are using the new Plutonium Celery Seed (or depleted Uranium version). ;) Perhaps 1.6 or ??

I find myself putting this on all kinds of stuff. (Jan's Rub) Two days ago, I was putting it on some spaghetti with meat sauce :o Also some bacon and eggs breakfast tacos :)

Kynola! Just wanted you to know, Jan's rub is our go to. Cant make meat as much as i use to. But the Jan's rub is a staple in our kitchen too! Still trying to find something it don't compliment. Wife uses it as the house spice and uses it for every thing. Just wanted to tell you and your wife thank you!

I have finally made and used this Famous Rub, and I have to say that it is very good! Made 3 Racks of ribs over the weekend and they were a hit! I had 1 rack without any mop on it and everyone loved those just as much. I used the juices that came from after the Foil Wrap of the ribs to make the BBQ and it just was perfect, light and sweet. The wife started using it on homemade French Fries some time ago. I won't eat French fries at home any other way anymore.

I made it and tasted it before cooking it on meat and it tastes sweet to me. Does it develop some heat or savory on meat, or is it sweet in nature throughout the cooking process. I used it in beans and it was good. Thanks!

Change the garlic salt to garlic powder, increase cayenne to 2 tsp. everything else is the same I'm pretty sure.

Ingredients:
1 cup + 4 tbsp sugar
1/4 cup Lawry's seasoned salt
1/4 cup garlic powder ***

1/2 cup paprika
3 Tbsp chili powder
2 Tbsp black pepper

I have used Jan's rub with sour cream or cream cheese, mixed well. About 1 tablespoon per 8 oz. Works great as a chip dip.

Some people have had intermittent success with getting on the recipe site, so here's the link. If it doesn't work for you right now they said it should eventually. They are in the middle of making some changes.

From my personal experience, the 2 tsp of cayenne and the garlic powder didn't make it "spicy". It took a lot more cayenne and paprika than that for me to get it to spicy.

Obviously BBN wasn't blessed with Norwegian taste buds. You know Norway, the home of white food. Lefse, lutefisk, mashed potatoes. We Norwegians save a lot of money on hot sauce and cayenne. Usually just having cayenne in the cupboard will make whatever you're preparing spicy enough. You don't need to bother with putting any in the food. :o

Beauty is in the eye of the beholder my KY friend. My wife Jan and I published the recipes for everyone to enjoy. You can tweak them however you like them.
OMG this rub is awesome! I just used it on some babys and grilled them up good! Can't wait to use it on some bbq

Kayes, a heavy application of Jan's is my go-to rub for pulled pork. The wife was in Charlotte a couple of weeks back and ate at a popular local BBQ joint. She came back and said that my pulled pork was better. Hey, ain't me. It's the Jan's.
