I can't get the Bradley over 200 deg today. Might have to cook the ribs a little longer in the second stage of the 3-2-1 prootcol. Might have to go 3-3-1 or something :-\
You can always go to the house oven. No worries! You gots to learn to relax. As our good friend CRG says "you can't hurt it, it's already dead." ;)
No worries! I'm relaxed..... just learning.. I ask lots of questions when I am in steep leaning curve mode! Thant's for the encouragement!
I closed the damper all the way and it climbed to 220. When I opened the damper the temp went down.
DON'T close the damper! The moisture needs to escape.
You're ok at 220. Don't open the door. Open the vent.

When I opened the vent the temp dropped to 190........ is that OK?

Gee I don't type well................
OK I opened it up to about 1/4.
It seem you are maintaining good heat with your vent setting. At 1/4 open just check the area where the generator enters the cabinet. If you see smoke backing out of the generator open the vent a little more until there is no longer any backup.
I never fool with my vent. first ribs I did I di a whole load. Couldn't get the cabinet up to temp for nothing. Ended up having to open vent all the way. Worked great and I haven't had a reason to close yet.
