I love pappsito's shrimp brochette (bacon wrap shrimp). To recreate it to work in a smoker or grill
I had to put on my thinking cap. They season the shrimp, then wrap bacon around the shrimp, slice
of jalapeno and jack cheese. That won't work if you grill (maybe indirect) or smoke it. After thinking
about it, I decided to nuke the bacon partially done. I did mine at 2 minutes power level 6. Wrapped
everything up and smoked it at 230 until the bacon was crisp. Delicious.

I smoked 4 lbs of shrimp for a family gathering yesterday and this was the leftovers.
Is a pain to peel,devine and wrap them but the rewards are pretty good.
Today I had a shrimp brochette hotdog, It was off the hook. CRG

I dont know how the heck I missed this one they looked great ( I say looked because I am sure they are gone by now). Wish I could get bacon more often around my house.

I am thinkink jumbo shrimps with long bacon layered several times along the shrimps length.

HR, they don't have to be wrapped in bacon. I'm sure you can get some kinda of salt cured meat. Get some nice meat sliced at deli about the thickness of bacon and that will make it more of a traditional shrimp wrap (for your area) than introducing something totally different. CRG
