Post by: wkahler on June 18, 2010, 06:11:14 PM
Well i have a 10lbs piece of shoulder to cook for the fathers day cook out.  I got my new smoker working and just need some advice for the first cook for the family.  I need to know how long to cook it per pound and should i put it fat cap side down or up??  I think i have it planned to put it on around noon and smoke for 2 hrs and then flip it to 225 for the next few hours.  Was thinking about 4-5hr cook time????? HELP!!!!!

Pork shoulder? Like a "boston butt" or a "picnic shoulder" ?

I don't think you are going to be happy with that shoulder after 4-5 hours.

It needs at least 8 - as many as 20-24.

If you want to eat it Fathers day, put it in Saturday night.

You are probably looking at a 16 to 20 hour cook at 225*

At 225 you will be getting some smoke the whole time.

Do it like you stated earlier, 2 hrs then to 225*

Which controller do you have?  (digital or the 3 position one?)

Butts on my Traeger take a minimum of 12 hours at 225°.
