Title: Quick brine question
Post by: sawzall on October 07, 2010, 08:23:18 PM
So if I make up my turkey brine (Canadian Thanksgiving this weekend) can I put some chicken in it tonight, and then take the chicken out and drop my Turkey in it tomorrow evening?  Basically, can I reuse my brine if kept in refrigerator the whole time? My timetable would be thus:
Thursday night-chicken
Friday night-remove chicken, drop in Turkey
Saturday night-remove turkey, pitch brine.
Sunday cook dried overnight turkey.

Is this safe to do with the brine?

IMHO, no it is not safe.

The brine solution will be weak after brining the chicken.

And you have added bacteria to it from the chicken.

Might as well make a new batch for the turkey.

Yeah, the bacteria is what I was concerned about.  I just won't brine the chicken...since I don't really like it anyway :P I just thought maybe it would be ok to do since I made up the brine anyway.  I'll just leave the brine in the fridge until tomorrow anyway.
