Couldn't resist the $200 Cabelas OBS deal.  Always wanted to get a bradley after eating Gizmo's food, but the $400+ price was a bit out of my range.  No more excuses!  Can't wait to get it.

Off to amazon to order some pucks...

Looks like I just missed your post last night.
Welcome to the forum.  As the others have said you will find a lot of great help here.  Next we will have to get another  SoCal Smoke out going once the weather warms up for LaQuinta.   :D  When she came down for the crawfish boil she needed to be dressed like a crab fisherman out in the Bearing Sea for the opilios as it was only in the high 70s here.  ;)

Just a heads up to Brian at Bradley, This sale from Cabella's is a great stimulus for wannabe or on the edge smokers. Wanna increase sales? Just give forum members some kind of a discount code to send to friends and family that have sampled the goodies and want to try it themselves. I have used this meathod before and it has a much more personal effect, as we are recommending a product that we truly believe in. My guests that have sampled my wings smoked in the Bradley and finished in the "Big Easy" have bought 7 of them. Very simple, satisfied customers create new customers.

Absolutely right SS, imagine how many would be flying off the shelves at Cabelas right now if the economy wasn't so bad?  Your idea makes sense to me, why not have an extra 1000 part time sales people working for you for free...

Not sure how the big stores can do the heavy discounts but it would be really nice if the small independents could get a bigger break from Bradley to be able to compete with the big box stores.  Probably some legal issue there for equality but just a thought.

Giz...I was wearing shorts and looking quite groovey for the boil...yes...I had a sweatshirt and everyone was sweating but...I had a chill!!! ;D Only 114 here today...why don't you and VA come out and visit?  :D  :D  :D We miss you both....come on...you don't want the peeps to think that you can't take the heat? I mean...I'm a girl....If the girls can do it...it's not THAT HOT...it's a dry heat!!!  ;D heh...heh...heh... ::)

Give me a call and I'll hook you up to hold you over.  Just got a supply as well.  Doing 10 lbs of jerky, a wild sockeye, fresh off the coast whole pacific sea bass, and a couple of Pork Briskets this weekend after I get back from a special photographer event at the Wild Animal Park in the morning.  Going to see if I can recognize any one's relatives out there.   :D  ;)

wow, i actually haven't even had time to unpack the thing.   my wife hurt her leg and can't get around too well for a while, so i've been helping her, plus doing things around the house.  i need to go shopping for some meat to smoke too!

The smoke is rolling!!!!!

just got it all put together and currently seasoning it.  Got my dad to make me some bubba pucks at the machine shop, so i'm good to go! 

First smoke will be some spare ribs.  Hopefully i'll have some time in the next couple of days.  I also found a maverick 1 probe remote thermometer unit that i got a couple of years ago on impulse, but never really used.  it'll definitely come in handy now.

The ribs are marinating in the fridge!  Got a couple of questions.

Which side goes on top?  I know you're not supposed to flip it.  I'm thinking the side i peeled the membrane off goes on the bottom?  

What do i set the vent on top at? 

Can I have some sauce suggestions?  Something not too hard to find.  I need to be able to get it tomorrow locally.  I have a good butchershop down the road (Iowa Meat Farms) that should have a decent selection.  Thanks!

For Store bought, try Bull's Eye.  If you want to make your own here is one that KyNola posted.  I have made this and would kick the heat up a little.  You can adjust to taste though.

L A Sauce by KyNola

1 HEAPING tsp BBQ spice (Check the local Kroger's spice rack, they have it as does McCormick.  Alternative, use the BBQ spice mix of your choice.)
1 tsp onion powder
1 tsp celery seed
1 tsp liquid smoke
1 cup water
1 cup catsup
1/4 cup cider vinegar
1/3 cup Worcestershire sauce
1 tsp salt
scant tsp of sugar

Combine all ingredients, bring to a boil and simmer for 30 minutes.  This sauce is so much better if you can make it at least a day in advance.

where do you guys put the maverick cabinet probe for the most accurate result?  i was going to put it through the top vent, but it hits the meat.  i thought that wouldn't be good for accuracy, so i stuck it in the door and rested it on the side of one of the vents.  it reads about 10 degrees lower than the bradley door thermometer.

cabinet temps taking a long time to recover.  about 40 mins so far and it hasn't recovered from the 100F drop from when i loaded the meat.

i think the problem is that my meat wasn't at room temp when i put it in.  i only had it out for about 30 mins, so it was still cold.

I like to hang my probe from the bottom rack that I'm using. Just took a paper clip and bent two small pieces to hold the probe. Run the cable through the door also. Did you preheat the smoker before putting the ribs in? I let mine go to about 260 before starting the smoke and loading the meat. Seems to help a lot on the recovery time as does letting the meat come to room temp as you mentioned. The ribs should be fine, you may just have a later lunch is all. Good luck.  ;D

yes, i did let the temp go up to 250-260 before i put the meat in..it still dropped to about 120.

Sounds like you put a full load of ribs in there, 4 racks worth. That's a lot of cold meat. The smoke IS doing its thing even though the temp is slow to recover. Open the vent to about 3/4 (to let the heat robbing moisture out) Go get a cold beer or two and wait for the 3 hour mark from when you put the ribs in. DO NOT PEEK into the cabinet until then. Watching the temp come back up is like watching water boil it aint gonna happen with you looking every 2 minutes.

pics as promised.  first one is after 4 hours of smoke.  second one is ready to eat.  i didn't sauce the ribs in the oven.  I left it on the side.  I got two sauces after recommendations from the local butchershop.  Miller's Secret Sauce, which was more of a traditional bbq sauce.  I also got Fire Pit which had a more vinegar taste to it.  Both were great..couldn't pick a favorite.
