Remember the old Ron White joke "Diamonds....that'll shut 'er up"? Well at my house apparently it is bacon. Jan has been wanting me to cure and smoke some bacon and today was quite vocal about it. So.......I went to the freezer and pulled out about 15 pounds of pork belly to thaw. I have 3 more full belly slabs in the freezer for future use.

lol, thats to funny larry. i just stayed out in the backyard all day. my wife and daughter were not in good moods.
I have not reached the point to where smoked products will keep her at bay, normally it's trips to the store(s) of her choosing while always passing Cabela's and my local smoke shop. Normally I just wave hi and we keep going.... :-\

HOLD IT. You aren't married yet and you get this already. AND you are going ahead with the marriage. SCREEEEEEECH that was the brakes coming on. You need to start her training right away before any wedding plans go ahead. Now this might not be popular with the ladies but it needs to be said " You need to get a pair and you can get them at Cabela's". LOL Regular trips to Cabela's and your fav tackle store or gun shop making sure she comes with you so she will realize what it is like for you to stand around in a dress or shoe store while she holds the bags of stuff and you will be on your way to training a good wife. Oh and remember, forum code dictates she not see this or any of her training will be rendered null and void. Plus she might contact my wife and then I will lose a pair. ??? LOL

And for the most part when I order something I always intercept those packages, with the exception of the bulk order I put in last month while she was out of town, yeah she saw that one and couldn't help but notice when my SRG came in.
For future reference, Duct Tape usually works to silence ladies as well. But if bacon works, use that.

16.5 lbs of unicorn pork belly rubbed down with the cure mix of kosher salt, brown sugar, and Cure #1(sorry Greenerlife).
Flipping daily for the next week and then into the Bradley with hickory.

Larry looking forward to this one. I am almost out of my 16 hour smoked belly. Actually have 10 lbs thawing in the fridge right now to be cured on Wednesday!
In day 6 of the curing period. It is firming up nicely. Will cure for another day and then get them ready to smoke. Will rinse them down, pat dry and then hang in the frig uncovered overnight to form a pellicle so the smoke will adhere better.

How much do yall normally pay for pork bellies? I am going to talk to a couple of butchers in town this week to see if I can get a belly but I don't know how much they should cost. Also does anybody order them online?

Smoked on Wednesday with almost 4 hours of hickory smoke. Allowed to hang until cooled and then wrapped in plastic and into the frig.
Sliced it all up today. Now that's a pile of bacon.

I ordered the boards from these folks: http://www.amindle.com/ I measured the quart and gallon vac seal bags and backed off about 3 inches in the length to allow for room to vac and seal and ordered two different sizes. The folks at A. Mindle make presentation boards for commercial use but they are also very accommodating for smaller orders like mine. They will custom cut them to whatever size you want. They are on the approved vendors list for the forum as well.
Very impressive Larry. One of these days I will get around to trying my hand at Bacon.

At the time I ordered mine, they were not taking custom size orders, and the boards are the same - gold on one side/silver on the other. They had two sizes, and what they did was to sell the run overs from larger orders. During one of my emails to them, I asked if I could cut the boards to different sizes. They replied I could; cutting the boards does not damage them. So if you have boards that are wide enough for the 11" bags, if needed you can cut the boards so they can fit the 8" bags, or even the smaller Portion Pouches. The Portion Pouches and boards gives your home made dry sausage, Canadian bacon, cheese etc; a nice professional touch.

I HATE doing everything by hand, unfortunately I'm not allowed to buy one of those til AFTER the wedding. I guess i'll just have to wait
