Title: Venison

A hunting fried has asked me to smoke/cook some venison pot roasts for him I've not cooked much venison.The plan is to cold smoke 3-4 hrs and then cook in the slow cooker. I Really want them to be moist and tender, my reputation is at stake here I wonder about injecting them with butter to add some fat. Any advice welcome.

I think I would wrap them in bacon and smoke for  a couple of hours that way. Probably at 225 until IT hit 130. You can always reheat in oven if it is to rare but with venison you want it more rare vs well done.
