Title: Two Little Fatties for supper
Post by: devo on March 05, 2011, 01:04:18 PM
Started off with store bought mild itallian saugsage

Then I took my trusty filet knife out and took the casings off
(https://lh6.googleusercontent.com/_jxWy0Fm3458/TXJp9KGrRBI/AAAAAAAAAMY/BXImVtOy_pw/s512/IMAG0171.jpg)

Flatened it out
(https://lh6.googleusercontent.com/_jxWy0Fm3458/TXJp-NcXH2I/AAAAAAAAAKE/QQw1r-LsiwQ/s512/IMAG0172.jpg)

Spread some Philadelphia Hearb & Garlic cheese on it
(https://lh5.googleusercontent.com/_jxWy0Fm3458/TXJp-h88xhI/AAAAAAAAAK0/RlN7xYBsm4o/IMAG0174.jpg)

Sprinkled some Montreal Steak Spice on it
(https://lh4.googleusercontent.com/_jxWy0Fm3458/TXJp-7K6c3I/AAAAAAAAAK8/N67DWHwH6RY/IMAG0175.jpg)

Added some colour with bell peppers
(https://lh3.googleusercontent.com/_jxWy0Fm3458/TXJp_IjUINI/AAAAAAAAAKk/ng7oTyAKG3s/IMAG0176.jpg)

Rolled it up and split in half
(https://lh6.googleusercontent.com/_jxWy0Fm3458/TXJp_5Uo-HI/AAAAAAAAAKU/oAZyfWPw_QE/IMAG0177.jpg)

wrapped in your basic bacon weave
(https://lh5.googleusercontent.com/_jxWy0Fm3458/TXJqA0zHf4I/AAAAAAAAAKc/264iEFnv290/s512/IMAG0178.jpg)

All wrapped up for two hours of smoke. Used crown royal for this one
(https://lh4.googleusercontent.com/_jxWy0Fm3458/TXJqATYMepI/AAAAAAAAAKs/ySX561jK1QM/s512/IMAG0180.jpg)

And after 4 hours its all done

Now dont that look good???

I've never thought about using the cream cheese spread.

The cream cheese gives it a very rich flaver. One i'm used to as I use this in a walleye recipe I have. Not sure what gave it some heat as the saugage meat was mild but hey its got some kick to it. Very nice indead and i will be making this again.
