OK, I'm on this one like a duck on a June bug, a rat on a Cheeto, well you get the idea.
16.5lb turkey cured for 50 hours with injection of 10% by weight. I added maple and molasses to the mix this time, let it cure then let it dry in the fridge.

It's plugged into life support now and seasoned with a little Atchafalaya Swamp seasoning.

It's been holding at 140 with plenty of smoke for 2 hours now and has 2 to go before the ramp up toward 190.
Got a full water foil water pan in the bottom and a tin foil drip catcher below the bird.
The ET-73 is working great and at my night stand for when I crash.
So 14 hours from now it should be good.
Are you doing this in the Bradley?
Yes. This is why I bought it. Smoking at low temps with cured meat.

Update at 0530 the IT is at 157 with a box temp of 190 which held perfect all night!!! I haven't even opened the door. Total time passed is 12hrs and 10 minutes.
