I bought two cheap Chuck Roast on sale at Groc Store. $1.79lb.

Each were around 3lbs. Was gonna grind them up for Hamburger

but they kept callin' my name. So kinda late today the fun started.

One on the Left got seasoned with a Brisket rub I have been wanting

to try along with a dash of Black Pepper. The one on the right got

B&W Meat Co BBQ Rub.

Also had some jalapeno/cheese doggies wrap in center cut bacon

dusted with Head Country.

New York Strips seasoned with Salt Gras Steak Seasoning

not pictured is another rack of New York Strips with Cowboy Blend with Coffee Steak Rub.

Put them on to smoke with charcoal and mesquite wood.

After about two hard hours of smoke they went onto a Hot Bubba Keg.

Glad to see you're not wasting any smoke.  Smoke ring looks good.  How chewable was the chuck?

Had a nice texture to it that I like. Little more firm than a brisket.

Would make for some supper sandwich meat after slicing it on a slicer.
