Christmas Jerky

Going to be smoking some jerky tomorrow to give to my neighbors as gifts, along with some canned goodies, too.

Sliced up just under 7 lbs of London Broil into 1/4" thick slices.
Going to use HM "Sweet and Spicy".

Applied season and cure but also sprinkled crushed red pepper flakes on it too.
Thought the "Spicy" was lacking a bit the other time I used it, so it needed a little augmentation.

Mixed it up well.

Stacked the slices in tight and covered with plastic.
Into the fridge for tomorrow they smoke. :)

Looks great Carolyn, I love Hi Mountain spices, but I find that all of them are lacking in flavor so I tend to use them simply as a base. If you like pepper and Garlic, try their pepper blend, and use that as a base and then use Lawry's Garlic Salt along with some coarse ground black pepper (both seasoned to taste of course) and then smoke. It is simply amazing! All of my customers say that it is the best P&G Jerky they have ever had!

Carolyn & I have often discussed that we should live next to each other - so you can't live between us - to the sides is ok  ;D  interesting neighborhood it would be :D  None of us would have to worry about the neighbors calling the fire dept because they see smoke :D

Thats going to be good Jerky!!! I saw Walmart has the Hi-Mountain Jerky cures the other day, 14 blocks from my house beats a hundred mile round trip drive to Cabelas  ;D

The jerky is in the smoker right now, it took 7 racks to get it all in there.

My mouth is watering! My first shot at jerky is this weekend and I also picked up some HM seasonings. Thanks for the hint on spicing it up a bit.

You know Kevin, 4 right side up, 3 upside down.   :D

I was able to take some out, still waiting on the rest.

I tried to use the leanest beef I had on hand but it did give off some grease as it cooked.
So there are some shiny pieces in there.  I'll tell my neighbors to keep it in the fridge because I worry about the fat going bad.

Guess I should use some deer next time.

If my hubby and daughter don't stop sneaking pieces of it I won't have enough for gifts!  >:(
