Title: Inspired by NEPA - Spam and Egg Breakfast Skillet

So back at the FL Smoke Out one of the many gifts that NEPA brought was some smoked SPAM.  I really didn't have a clue as to what to do with it but after doing some internet surfing I decided on a Spam and egg breakfast skillet.  Although the wife wouldn't touch it, I thought it was great!  Here's what I did:
1 can of spam,  chopped into cubes (smoked by NEPA)
4 small/medium potatoes cubed  (about 2 cups)
4 eggs
1 medium onion
1/2 cup shredded cheddar cheese
4 Tbl EVOO
S&P to taste
Hot Sauce to taste

I cubed the potatoes and onions and placed in the pan with the EVOO and sauteed.  Then I added the Spam and cooked until the potatoes and the Spam were crispy.  Once the potatoes and Spam were ready I added the eggs and salt/pepper/hot sauce.  When the eggs are fluffy or scrambled I added the hot sauce and served.  Thanks Rick!

Oh Ya thats gooood.

I make some thing like that all the time but use sausage, call it hunters speacil.  ;D
