Title: Jerky smoke and cook time
Post by: ralphy670 on January 02, 2012, 06:58:32 PM
Hi all. I was wondering how long most of you smoke your jerky including total cook time and what temperature?   I am new to this so sorry for the stupid question.

I usually smoke for two hours, I like lots of smoke taste. If I'm doing about 5 pounds it can take up to 8 hours to get done. You want it to bend but not break.

140? for 1 hour with NO smoke
Bump to 150? for 1 hour and apply 5 pucks of smoke.  I like Hickory when doing Teryaki Jerky
Bump to 165? for 4 hours
If needed ... bump to 175? until the jerky bends.  If it breaks it's overdone.
