I LOADED down the Smoke Generator with 2/1 hickory/apple
As far as rubs ..... you name it I used it Head Country, Salt Lick, Iceman's Rub,
Adobo & Goya Complete, Zack's Sweet Rub, Pitts & Spitts Sweet Rub, Jan's Rub, etc.
Set the Aubers to 260* and started loading things up on a 30 minute cycle.
I did it like Noak loading his Ark. By two's.
3 ribs on rack 3
Looking real good. Keep us updated. Either going to be a lot of eating or a lot sealing.
Rack 4 another slab of ribs
and 10 lbs of sausage
Rack 5 24 links of Boudain and the rest of the sausage.
And that's all.

Wow Sonny! That is a buttload of meat(pun intended). Good thing you have family members who raid your freezer on a regular basis plus those little granddaughters who will do the boudin dance! :D

When I talked to Suyi at Auber about what I wanted to do,
He was kinda lost for words about what to expect.
He express some concern that the newest PID Dual probe might
not be up to the task due to the fact that on/off switch was not
as heavy duty because of having to make it smaller for the plug to
the generator. He said "No worry, it under warranty".
I took a nap between 3:30 and 6:30 and the pid quit.
The smoker is only running on the 1250 watt element and it
is humming along at 225*
Because I staggered the times I put things in the smoker,
I ended up running the smoke generator for 12 hours.
I will post some pics here soon.
It seems strange to lose the PID on the 1000 watt element? That's no different than controlling my OBS with the dual element mod. Glad to hear your temp is holding or I could see a possible panic happening!

I agree. The PID seemed hot from the start.
I started this at 4:30 and had the cabinet set at 250* while I loaded it
up doing two butts, brisket, ribs every 30 to 45 minutes to allow the cabinet
to stay to temp.
I really don't know I needed that much time in between as the temp caught up every 15 minutes.
I kinda hate Suyi has to fix something, but he said do it and see what happens.
Now that I know the box does a good job on the two elements., I'll have a PID just for it made.
The Master of the big load in the smoker is at it again--Yee Haw-- I really enjoy your posts on these big smokes. Your pics are good as well as the write up.. Rock on CRG.

I agree with Mike, build a custom controller for your smoker, it is really easy
I did for mine too, I have two power cords that I plug into separte circuits
everything is 120volts.

I didn't have time to install a variable switch in it so I just raised it
1/4" or so and off set it. No smoke in the smoke gen.
This has been Fun so far. Wish I would have started in the earlier part of the day
to get the sausage and boudain and ribs done before bedtime and then let
the butts and briskets ride the nite. Butt, I just couldn't wait any longer.

hal, even with the one element, it is holding like a dream. Just bumped it to 235*
That's some sweet looking meat you got there Sonny! You're going to have a bunch of happy folks chowing down! And I say the PID failed within its useable specifications, just a bad component! And we all know the Auber CS is right up there with Bradley's!

Good job on those butts, and I'm guessing that the package lables are incorrect. I'll bet they aren't tough at all and it sure looked easy to me.

That thing is amazing. Also, that's some tasty looking pork. You should convert a riding lawn mower to a smoker-float and drive that thing around town selling sandwiches and ribs like the ice cream man. How do you know the smoker man is here? The sound of Zeppelin, Stones, Sabbath and Maiden slowly getting closer.
