Chicken Soup

The wife had a root canal today so I decided it was time to make a big pot of chicken soup.  I always find an excuse to make chicken soup so I can freeze some and keep it for when someone gets sick.  Its simple, but very good. 


Is it bad if my wife refers to the smoker as "The Mistress"?

Man did my post give all you guys a virus?  lol  I pretty much wing it but I'll give you the basic recipe I use...

1 whole fryer chicken
1 part water 1 part chicken broth (I like a more rich flavor thats why I add broth)
Carrots (diced)
Celery (whole)
1 small onion (quartered)
3 cloves garlic (minced)
Seasoned Salt
Garlic Powder
Salt
Pepper
Italian Seasoning
thyme
Lemon Pepper

In a large stock pot I add the chicken, gizzards pouch, water and broth.  I add remaining ingredients and simmer until chicken is cooked through.  Usually about 2 hours.  Once the Chicken is to safe IT (170) I pull out (along with gizzards pouch) and let cool.  When the chicken has cooled I remove skin pull from the bone and chop.  (At this point the dogs are drooling so they get the scraps and gizzards) I keep the broth simmering for another hour and then I strain all the ingredients except the carrots.  That's the reason I don't chop the celery or carrots, the wife's not a big fan of cooked celery or cooked onion so that's why I take it out. You can chop and leave in and its just fine. At this point I usually add some more water to keep the stock pot full.  Keep in mind that you are going to add the chopped chicken back in later.   In another pot I bring water to a boil for the pasta.  In this case I used egg noodles but sometime I like to use tortellini.  I only cook enough pasta for that days meal.  This makes a big pot and I have found the pasta doesn't freeze well.  Once the pasta is started I add the chicken back into the broth that is still simmering.  When the pasta is done I strain and put into soup bowls then add the chicken soup.  Like I said before I just wing it so feel free to add or delete ingredients as you wish, well except for the chicken.  ;D ;D ;D
