i read when you guys say 70/30 venison to beef fat.     when you say "beef fat"....do you mean fatty ground beef or actual ground beef fat?

When I have sausage made, I ask for a 60/40 ratio.

60% venison to 40% ground beef or ground pork that

is ground at 80/20 or 75/25 (beef to fat or pork to fat)

That is the ratio I will be making to my venison sausage.
