Title: looking for a potluck idea...

The crew at work is expecting some kind of smoked goodness from me for our Thanksgiving potluck this Wednesday... 

Well, I don't have time, my alarm goes off at 4:50AM, we ate most of my smoked leftovers Saturday night, and the weather is turning sour tomorrow.

So let's do a "Chopped" episode.

I have in my basket...

- Hurst 15 bean soup mix
- roughly 2.5 pounds of pulled pork (frozen)
- (commercial) turkey smoked sausage (frozen)

In my pantry:

- couple cartons of low sodium chicken broth
- Crystal hot sauce
- couple cans of Hunts fire roasted diced tomatoes
- couple cans of black beans
- various spices of all kinds
- Worcestershire, Liquid smoke, and a few 1/2 open bottles of BBQ sauce

- (and a free trip to the grocery store if we need something else)


I was thinking a pressure cooker 15 bean 'chili' (again, apologies in advance to the chili purists), with the shredded pork and sliced turkey sausage added in after the beans were done. 

Thoughts?

Checking my laundry room + garage pantries, I have some Bad Byron's Butt rub, lots of bacon salt, 1/2 a bottle of Jose Cuervo Silver, 7 boxes of Girl Scout cookies and some insulin.

Ok, ignore those last 3.

You could almost go from a chili type of dish to a gumbo....do you have any rice, celery, and onion?  Some green pepper too?

Why not smoked baked beans - with a lot of that pulled pork chopped up in it?

I've got Texmati brown rice..  

I can get anything necessary at the store tomorrow at Noon...  (doing this tomorrow night)  I was just having fun with what I have in the house right now.

Whatcha thinking about?

We always get a couple-three-six baked beans dishes...   (even though I know where you are going, and we could knock it out of the park..)

I want to mix it up a bit w/ the 15 bean base.

I guess I was thinking you could make like a sausage and pulled pork gumbo type of soup.  You have all the beans you could possibly need, plus the seasonings...If you had some onion, green pepper and celery to saute up and add to it, it would be more authentic.
I know what you mean about not wanting to go to the store if there is no need.
Even without the "holy trinity" there, you would have a good soup, I guarantee!

But if you're gonna mix all that up and call it "gumbo" you gotta get some okra...
"Gumbo" was brought here from Africa and roughly translates to "Okra".

Try the frozen aisle. I've seen it there in some pretty small stores. Good luck on it!

Ok, you got me there.   Frozen okra from Cub-up-the-street..  Check.


What next?  Beans to rice ratio?

I have to do the beans in a ~5 qt pressure cooker, but I can move to the big 8 qt CrockPot for the long haul..

Gumbo huh?

STC, do you know how to make a roux?  Trust me son, it's all in the roux.   There's a reason Cohen's never served gumbo.  Hal doesn't know how to make a roux.  Instead he punts it by throwing some okra in there.

You need CRG or Ronbeaux or NePas or me to walk you straight through a gumbo! ;) :D

Lip's are moving.

However, Cohens NEVER served a gumbo.  No roux knowledge in that kitchen.

Well, so far, this is a hybrid pressure cooked 15 bean pulled pork w/ rice gumbo melange...
(for a bunch of people that aren't real high on my 'list')
Not sure I want to go 100% Gumbo prep. (i.e., chocolate roux)

You have most of the ingredients to make Black Bean & Pastrami Soup (http://www.susanminor.org/forums/showthread.php?t=574). You can use any smoked meat instead of the pastrami; such as pulled pork, or some of the Canadian bacon you just made; or no meat at all.

Dang guys!!!  Now I have major hankerins' for soup, gumbo, deep-fried okra, and WTS pulled pork egg rolls!
And I still have to DUST the furniture...............

I'm going to do a little of everything...  15 bean soup mix w/ low sodium beef broth + rotel tomatoes in pressure cooker, blast, add chopped onions and Cajun Trinity, another quick blast, transfer to crock pot and pile on the pulled pork.   Add V8 juice to adjust consistency.      No turkey sausage this time. (will be turkey'd out by this weekend)

No rice this time around, I looked and there are already a couple rice dishes being prepared.  It will be a carb fest for sure.

Please enlighten me.  I didn't think you could make beans or rice in a pressure cooker because they foam up.   ??? ???  At least that's what the book said.

I do it all the time in mine...  You have to use less liquid, though.  And a splash of EVOO keeps the foam in check.

Last time I did the whole bag of Hurst beans, but it made the pot dangerously full.  I might cut down a bit this time..    I did a post on it somewhere, will dig it up.

Take the 15 bean mix soak over night as per package instructions.......rinse and drain....put the beans in a big soup pot add some of the pulled pork (amount up to you) or all of the smoked sausage chopped up.....add the chicken broth, the fire roasted tomatoes undrained, one box of chopped spinach.....add water to reach amount of soup desired....season to taste with spices and some hot sauce to taste......simmer a few hours, taste to check spices...when right...enjoy!!!

And the idea for adding the pulled pork came from KyMakNola..

I will still have some pork left over, so I grabbed a bag of pintos at the store.  Will play with those some other time.

If it works, yes it was my idea.  If not, I was never on this thread!  One thing STC, the pork may have a tendency to cook apart and it get kind of stringy if left in there a long time.. That doesn't bother me at all but I wouldn't want you to get a big surprise when you looked in the pot.

Thanks, it's a bit stringy as is, so I'll put it in towards the end after the beans are all happy happy.
It can soak up the chili flavors overnight.   

I'll plug the crockpot back in around 6:30 when I get to the office, and everything should be nice and hot by Noon.


Hal, if you weren't working all the way on the N end of town, you could swing by for a bowl!
