Yep and you just fill the holes with Mozzarella cheese after seasoning. I always add a little fresh cracked pepper on top of the cheese for looks.

Totally cooked my first ribs in the smoker and forgot to take pictures...
Had a slight issue with getting the temperature back up to 225, but it's probably because I preheated it to 150 instead of "AS HOT AS POSSIBLE" (Oops...)

I'll be posting recipes of the Salsa's I've made to date soon as well as the Roasted Corn & Black Bean Jack Cheese Quesadillas I'll be making as well.

I think I've got it down to 3-4 Salsas, the Empanadas, still have to experiment with the Hotdogs.

Ribs, PPork, Sliders, Quesadillas

Some kind of Fruit soaked in some kind of Liquor and Mojitos.

In short... Great Success!

Thanks for all the help... I kind of guessed a recipe for a few of the items..

Example: Smoked Chicken I brined for 4 hours, threw in a smoker at 225 for 4 hours... wrapped in foil for a few hours and pulled it. Left it in the fridge overnight, threw it in some olive oil, cumin, garlic lime juice, black beans, p-jack cheese... toasty/tasty! I'll add up better recipes as we go on (Should I do a seperate forum for each one?)


Have pictures uploaded on Picasa and just have to take some time and link to them. As a "Space Saver"


Appetizers:

Black Bean & Mango Salsa


Spicy Yellow Pepper and Tomato Salsa

Smoked Chicken (Cuban Style) Quesadillas

Smoked Pigs in a Blanket (Oh my god tasty..)

Mains:
Ribs: (Mix of Baby back and Spare... I had to cook the bback the day before because I only have a 4rack OBS)


Pulled Pork Sandwhiches

Sliders (With Bacon) Not shown are fried onions/special sauce


Desserts:

Chewy Chocolate Chip Cookies

Summer Berry Pie

Mojitos!

I'll post a recipe up soon... I took it from a Cooks Illustrated book... and made a modification or two, so I guess that makes it non-copyrighted?
