Fajita night

Felt like a batch of fajitas for dinner last night!  After an overnight soak in the marinade and resting while the smoker comes up to 220



2 hours of mesquite later



Then off the grill about 2-3 minutes per side



Sliced up thinly against the grain



Added sauted purple onion, garlic, red, green and yellow bells



Plated up, warm flour tortilla, sour cream and cheddar cheese......Dinner Time!   ;D

We had roast chicken tonight, one of my favorites, but fajitas rank right up there.  Thanks for the post.  I think I know what I'm going to do this weekend.
