SoCal BS'ers At Perris Auto Speedway 3pm Sat Feb 9th
we are preparing a pre race feast fit for monkeys...
perris auto speedway is south of the 60 off of the 215... 3 miles east of the 215 off the ramona expressway at the socal fairgrounds...
looks like 60 miles from the owrstrich... 55 miles from the la quinta... 50 miles from the west coast kansan ... 45 miles from the gizmo... 400 miles from the consiglieri... 450 miles from the arcsnsparks... 2700 miles from the nepa... 3100 miles from the iceman... ??? miles from who else... who else... who else...
the deal is... its $5 per vehicle to park and its $20 per person to get in... we usually sit in the turn 4 bleachers... need glasses to protect the eyes from flying dirt if the wind is out of the east... no dirt in the face if the wind is out of the west... the show kicks off about 5pm and usually goes to about 10pm... this is a double header with 360 cubic inch sprint cars and 410 cubic inch sprint cars... typically the first race of the season draws the top drivers from throughout the country... perris is one of the finest prepared 1/2 mile dirt tracks in the world...
i am going to put 4 hours of cold smoke hickory on 2 onion soup rubbed 8 pound HONEST MEAT MARKET ORDERED & STAMPED PRIME prime ribbs then finish them off in a hot hot oven to 125 internal then cooler at 2pm for a 3pm arrival at the track for a parking lot tailgate... we will be able to get about 11 1.5lb slices from the finished product...

Well I made it from Prudhoe Bay to Anchorage 680 miles and was gonna take a right to Burbank CA but Ann said it would be the last time my little bee bee brain would be capable of a function if I didn't turn left and get home. ::) :o :D

1533 Miles, 21 hours 46 minutes. Doesn't sound too bad, and I bet it's warmer there than the 12 degrees it was here today. The prime rib does sound very tempting as well, but I just don't think the Mrs. will be on board. She wants to go to Vegas to celebrate her 40th in March. I think I would have a hard time convincing her that Perris would be better than Vegas. But you know what they say "what happens in Perris stays in Perris". Or am I confused on that saying???

i went up to the butcher shop yesterday to take a look at their selection of beast and they had 1 slabb of the prime ribb on their case... they stock choice and prime is special order... i can really see the difference side by side...
i like that smart n final stuff we had because it fits perfectly in the bs and our hotel size oven... this real stuff from the butcher will be cut to size lengthwise but its taller and its has very lean innards with a 1/4 fat cap...
anyway... it looks killer...

we get our tickets the day of the show... however i just got my new work schedule and its out to fri feb 8th... which is the first part of the 2 day show...
so... we are in ontario until 4pm... so we are going to leave our trailer at our job site and go to perris friday night too... that means i can get the tickets on friday night for saturday... no waiting in line... if there is a line... so i will get a head count later...
so far it... owrstrich and that crazy wench... = 2
la quinta and anything mint... = 2
giz and the lovely va... = 2
not sure about the wck clan... ???
so thats either 6 or 8 so far... that crazy wench has a friend in esinore who used to work at ascot who may come too... thats all i know for now...
other than my plates... knives... forks... drinks... i am bringing 2 hickory smoked prime ribbs... didnt want to use cherry cause it gives the wck a headache... i also gotts some low grade horseradish sauce... have not found any good quality horseradish yet... still looking...
im gonna divide up the left over slabbs... if amy... so im bringing some some big zip locks for the cooler and ride home...
if it rains on feb 8th or 9th like its raining today then the race maybe postponed a week... in 6 years out here its only happened once... so keep your eyes on jackie johnson...

Nepas, is your place near Nazareth home Of the Andrettis. I went to the inaugural Cart race there many years ago. I believe Michael Andretti won it. Pennsylvania is a nice state. I did not realize all the dirt tracks you have there. The one closet to us was closed down and they built a Menards store there. The car dealer next to the track always had to clean their cars the next Monday.

Nazareth speedway is about 35 miles from me. However the Mahoning Valley speedway is just down the road about 4 miles

Don't remember what I PM'd O' that I would be bringing. Think I remember a carving knife, crab dip, and now some beef sausage and slim jims. I'll order some Atomic Horseradish since O' had put in the request for some real horsy stuff. Maybe O will send my PM back so I can remember.
Nuclear horsey sauce is a good thing! I'm gonna do cold smoked salmon....crackers...cuckes...cream cheese...creme fresh? Thinking about a desert...since I'm from the dessert! Maybe apple struesal cheesecake bars? Also thought about a smoked veggie terrine?

so my boss... the big giant brain... has changed our schedule... looks like we are working a 3rd shift now on the 8th... thats a 1st... 2nd... 3rd... shift all in 1 day... at 2 plants... i swear he does that ch1t whenever he thinks we have personal plans that does not involve driving or doing maintenance or testing...
so no getting the tickets the night before now... i dont know what the crowd will be like... the nhra is at pomona for their first race of the year and the budweiser shootout from daytona is on tv that night... so lots of racing going on the 9th...

Well Spent the better part of yesterday and today getting the slim jims made but they are in the smoker drying right now. Weather has put a damper (emphasis on damp) with getting this going but I improvised a bit to get the BS out of the rain. It has been a guest most of the day.

Sure, but you might want to wait till you try them or I get a few more under the belt and get the process down myself. Fortunatly the learning experience is fun. Just wish I had all the answers.

i have found that nuking them from fridge temp to warm to eat in individual zip locks works pretty good...

The slabs will be fine :D The goat brain sausage are a real treat but not sure the Mrs would go for them. Rumor has it Holly may be out Thurs or Friday so we will definitely be around.

Got the smoking hot fire roasted salsa getting happy.
Curried Couscous is finished and getting happy.
Shrimp and Wahoo Ceviche will be citrusing/marinate cooking in the AM.
Will roll the smoke on some Pistachios for snacking in the AM as well.
Beef Jerky, Jimmies, and cooked shrimp with atomic shrimp c0cktail sauce will all be joining in.
Will bring the carving knive, some beer, wine, water....

the high for perris has now been upgraded to 85 degrees for the high at 3pm... but chilled to 60 at 7pm and 50 at 11pm...
so... what would you recommend for this forecast... mentor oh... i see no sun in the forecast... lotts o rain and snow and clouds... my recommendation is... continental from cleveland to palm springs and ride out with la quinta... there is a direct flight that will get you here at 1:10...

After stuffing ourselves, we headed in for some wind sprint races to wear off what few calories we picked up. No, not us, we sat in the stands with the wind breezing by and the spint races on the dirt track.

The pebble looking stuff on the ground is not rock. It is actually little mud pellets created by damp dirt and high speed spinning wheels as they fly around the track. LaQuinta learned quickly that if you don't want a choco mocha beer while walking to the stands, you want to cover your cup. >:(
A few thrills and some hard fought battles, not every one had an upside down time, especially NOT the SO CAL SMOKERS.

Prime Rib from the O at the WCKs house tonight as well. Can you believe that ... the guy cycled down from Orange County - Land of Desperate Wives to deliver it... SoCal BS'ers really good people.
Warmed it up by dipping in some Onion Soup for a short time, Potatos, non atomic HR and lots of sour cream... even a little green stuff on the side.
If it was not even better warmed up - it had to be spectacular at the races.
We missed ya WCK...hope all is better with Holly! Maybe next time? :)

the beast was just ok... it hottened up in the cooler on the way to the race track and was not as rare as it should have been... but it was still warm and juicy... and there was plenty to take home...
the best food of the evening was la queentas salmon and the gizzerdmos smorgassboard of roasted salsa and donkeyraddish salce and wahoo fesh and that fesh relesh stuff... o my... and the sausage and the jerky was outstanding as well...
and then this morning i scored some wck maple smoked bacon when i delivered a chunk of beast to the oceanside where it was a glorious day...

Looks like a great time.
All the food looks great, but I have a question about the tin with the various dips/sauces. Is that a product of innovation, or is it produced by a manufacturer? Either way, I would like more details on it; ie if and where it can be purchased, or the size of the canister and bowls. That would be a neat contain/carrier that I could use.
The only thing that makes me madder than missing that great food is seeing you guys in tank tops and short sleeved shirts. Couldn't do that around here this weekend, for sure. I'm glad you guys had a good time-nothing better than good food, good friends, cold beer, and the excitement of any kind of racing. I'm about 15 minutes from the Bristol track, but it "aint what it used to be". I'd rather drive 5 hours to Louisville now and watch the horses run...
Habs...I have no idea where we got that but I'm pretty sure each little container had an Indian spice in it when we bought it...we've been racking our brains about it...hubby thinks I got it on the internet and I think I got it in a store...gonna keep trying to remember...I think we've had it like 10-12 years...it is a handy little doo-dad.
