Starting the Christmas Smokes

Got a lot of Christmas smoking to do. Have to replenish the cheese stash since the kids came home for Thanksgiving and ate most of it and took the rest home.
Then I have to restock the pepperoni (same reason as above- goes good with the cheese). Also going to make some pistachios and slim jims.

Here are 2 racks of cheese laid out. I decided to take pictures with the wrappers on since I never remember which one is which.

My pucks aren't advancing, I think it is time for a SG cleaning. I'll work it by hand for the cheese and fix it in the morning before I start the pistachios. Or maybe while the pepperoni is drying.
So this is it for the cheese pics as I will be stuffing the pepperoni.

Going to be a busy man!  Good start on the cheese.


Enough ain't enough and too much is just about right.

Finished the cheese last night and stuffed the pepperoni (see separate post).
Cheese bagged and tagged. Only used 1 hr of apple as I didn't want it too strong since I only have a couple of weeks to age.
