Today I will go to Sam's and pick up two 10 pounders for my father-in-laws birthday get together Saturday night.
My "world famous" brisket was requested by the birthday boy.....what's a guy to do! ;)
The past few times at Sam's I see they have pork loin allready marinated in the vac bag.
They have a couple of flavors...one is apple and I can't remember the other.
Has anyone ever tried these little marinated piggies before?
Thinking about picking one up of each.
I tried one of those marinated loins... Personally, I wasn't too crazy about it.
It turned out Ok, but whatever they pumped it with was a bit overpowering.

Your FIL is a lucky man to have a SIL that would drop everything in his busy schedule
and smoke/cook his "World Famous" brisket for him for his Birthday!

I have tried them but cooked on the grill on the rotisserie, perty good that way.

I took a 1-1/2 hour road trip yesterday to a larger town south of where I live. Stopped at a few stores that are not available in my area. Then since I'm not a Sam's member I went to the huge Wally world next door. I have got brisket there in the past. None in the cooler and the butcher said they do not carry it anymore. Whats wrong with these people? >:(

Gotta watch there prices though they like to jack them up when somethin is sellin good or the supply is gettin low.
I have stopped buying (fresh) meat at Walmart since they did away with a
butcher dept and all their meat is shipped in already packaged.
I DONT SHOP AT W*****T AT ALL.
I will leave it at that.

That's what I find at my Sams. Never got a packer there.
But they are not highly trimmed either, like the ones in the grocery store.
I just bought two Angus, whole briskets, choice for $1.78 a pound at Sam's.
I guess the "whole" would be a packers cut?
They also have just the flats.

I went by Sam's again tonight (Sarasota Florida) to check and see if they had whole briskets there and they only have the untrimmed flat. >:( I guess I'll be going to the Butcher 2maro and getting my Packer's cut. At $2.79 per lb. Anyone know where I can order and have it shipped? Obviously not in time for the super bowl :-\
I get the Sams flats. Not as good as the whole packer I bought at the butcher, but not a $60 brisket either.
The Mrs. usually ends up picking them up for me, she does the "bend test" and picks them that way.
The thought is if you can bend it and touch the ends it will turn out tough.
It might be an "old texans wives tale" but it works for me.
The wife told me to go BACK to Sam's and get more Angus packers @ $1.78 a #.
I'll need a cart for this go-a-round.....hope OU don't beat me there!

No crap, females, I have 3, are much easier to potty train also. We got Taby a male Boston Terror and he is just learnin to lift his leg, had to swat him the other day, he pissed on my plumbin stack in the basement. Now he has a tree that is all his, got his name all over it.

Keeps the foil off my meat. Now the mustard slather can't touch the foil and melt it into the meat!

Dang guys, invite me to that party next time.... ;D I was just in the Papillion Wal-Mart yesterday (72nd & Giles) and they had packers at $1.68 or $1.78 a pound also, but I don't think they were angus. Wife is p.o.'ed that the freezer is getting full. I stopped by the Air Force Base and pork butt was $.95/lb, so I picked up 6 more (only stopped for milk and eggs...). I'm hoping the snow stays away as I am planning to start some venison summer sausage tonight and then one of the pork butts and a chicken for Super Bowl Sunday.

MP, we've chatted before, I just haven't been on in a couple of weeks, dang work got in the way. I live in Grandview south of Walnut Creek Lake. I'm smoking tonight in the light snow storm. I have 13 summer sausage hanging right now (close to 25 lbs). That is quite a load in the Bradley, but I have time.
I will probably throw the grill cover over the electronics before heading to bed, but I want the smoke to be done so I can change the water before heading to the rack. Not sure I want to wait another 3-hours though. It's almost midnight now.

Looks good Mike! I shoveled the deck off and left it sit out back all night with the summer sausages. Just shifted them to the oven so I can get the chicken in the smoker and pulled the Pork Butt out so it can get to room temp. While slathering and injecting this pork butt, I noticed that the Base grocery store deboned it. Hoping to have chicken for supper tonight and pork butt for the Super Bowl.

Rick, if your Butt is deboned, You may want to tie it together to keep pieces of it from drying out.
If you tie it up, becareful when you probe it for IT so that you don't hit a vacant pocket in the Butt.
CRG, thanks for the tip. I will pay attention to that. Don't have anything handy to tie it up with today, so I will keep an eye on it. I laid a good amount of marinade in there as I was slathering and injecting this one.
The chicken is up to 133* IT now. Got the butt rising to room temp. Hope to have it in by 6 p.m. so it will be ready for the Super Bowl. I haven't shut my Bradley off since 5 p.m. yesterday. Probably won't until I pull the Butt out tomorrow.

Don't think my Pork Butt is going to make it for the game. Hit a big stall this morning and the water bowl was bone dry when I woke up. Vents wide open, turned the smoke gen on this morning, just hit 160* IT a few minutes ago. Moved the probe to make sure I wasn't in a pocket. (I was judging by the last one I cooked, as it took about 20 hours, thought 5 p.m. yesterday was early enough...). Still have to factor in the FTC process, unless I decide to skip it (undecided). It might be time to look at the options and have pulled pork sandwiches for lunch tomorrow. The guys and gals at work will be jealous. ;)
Chicken is now completely devoured, wife loved it. Broke into a summer sausage too, best batch I've done so far. I do believe I am getting the hang of using my Bradley.
I'm not sure what timezone you're in, but from here you are already into 24 hours.
when mine hit 160F they still have 3 to 4 hours to go.
Nebraska is in the Central Time Zone. We still have about an hour before it hits the 24-hour point. This is an 8.5 lb butt. I might just pull it out at 165* IT and slice it. Or, it will be tomorrow's lunch.
okay, 8 p.m. and just put the piggie in the oven. IT was 167* and it is 8 p.m. 27 hours in the Bradley. I'm now at the dilemma of slicing or letting it go toward pulled pork? Didn't have supper, but my summer sausage got me through. Not sure if I was working the vents correctly, which might have caused the time issue?
